Let's be real, breakfast is the most important meal of the day. A truth that we must have avoided. But why? Maybe because we just do not have enough time, or because they are too oily and sugary, adding extra calories to our day.

Well, worry not, this breakfast recipe is the solution to all your early morning problems.

First of all, why is breakfast so important?

Because it replenishes your body's energy and nutrient stores after an overnight fast, boosting alertness and concentration. Making you feel more energized at work and being able to perform better.

Vegetable Egg Muffins

If you love omelets but hate the way they are cooked in a ton of oil as if they were swimming in it, then these egg muffins are the best alternative for you.

These scrumptious and simply delicious egg muffins are the way to start your day.

It only takes 10 minutes to make these, and in no time, you'll know they are at the table ready to be eaten.

Ingredients

  • 2/3 eggs
  • green chillies
  • cabbage
  • tomato
  • red onion
  • spinach

Spices

  • red pepper
  • black pepper
  • salt

You can add any vegetables and spices of your choice, but these are my personal favourites.

Just make sure they are not too hard and do not take a long time to bake, like carrots and potatoes.

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C)
  2. Chop all the vegetables
  3. Crack two eggs in a bowl
  4. Add the spices according to your liking
  5. Add the chopped vegetables to the bowl
  6. Mix it all up thoroughly
  7. Pour the mixture into muffin tins

Tips For Making It Tastier

If you're someone fancy and want a whole five-star breakfast, you could add some extra ingredients to your egg muffins.

A great option would be cheese.

I mean, come on, who doesn't love cheese? It is a need for us in order to live happily.

Just mix some cheese in the batter and a little bit on the top. Though you could use any type of cheese you have but I would recommend cheddar or mozzarella cheese.

If you don't like vegetables as much as I do, then no worries, you could add pepperoni or sausage to your egg muffins.

Make sure your oven is preheated. Bake them in the oven for 10 minutes.

Important Note:

Every oven is different, so the timing also differs for everyone. It may take longer or even shorter to bake these delicious egg muffins. Just make sure to keep an eye on them on your first try, and the next time you make these, you will know how long to bake them for.

These egg muffins are not only delicious, but they are also keto-friendly and low in calories.

It only contains around 300-350 calories. But if you actually are fancy and decide to add extra ingredients, then it may contain around 400-480 calories, depending on the quantity and type of cheese, etc.
