Ingredients:
For the Stir-Fry:
- 1 lb (450g) boneless chicken breasts or pork loin, sliced thinly (you can also use shrimp or tofu for a vegetarian option)
- 2 tablespoons vegetable oil

- 1 cup broccoli florets
- 1 cup bell peppers, sliced (any color)
- 1 cup snap peas or green beans
- 1 small onion, sliced
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, minced or grated
- 3-4 green onions, chopped (for garnish)
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons of water (for thickening)
- 1 teaspoon sesame oil
- 1 cup chicken broth or vegetable broth
- Salt and pepper to taste
Instructions:
-
Prepare the Ingredients:
- Slice the meat and vegetables as needed.
- In a small bowl, mix the soy sauce, oyster sauce, chicken broth, and sesame oil. Set aside.
-
Cook the Meat:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced meat and stir-fry until browned and cooked through (about 5-7 minutes). Remove the meat from the skillet and set aside.
-
Stir-Fry the Vegetables:
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the garlic, ginger, and onion, stir-frying for about 1-2 minutes until fragrant.
- Add the broccoli, bell peppers, snap peas (or green beans), and bean sprouts. Stir-fry for another 3-5 minutes until the vegetables are crisp-tender.
-
Combine and Thicken:
- Return the cooked meat to the skillet and pour the sauce mixture over the stir-fry.
- Stir everything to combine, then add the cornstarch mixture to thicken the sauce.
- Cook for an additional 2-3 minutes until the sauce thickens, stirring occasionally.
-
Season and Serve:
- Taste and adjust seasoning with salt and pepper, if needed.
- Serve hot over steamed rice or noodles. Garnish with chopped green onions.
Tips:
- Feel free to customize Chop Suey by adding other vegetables such as carrots, mushrooms, or zucchini.
- Adjust the seasoning of the sauce to suit your taste.
- Serve immediately for the best texture and flavor.
Enjoy your homemade Chop Suey!
