Ingredients:

For the Stir-Fry:

  • 1 lb (450g) boneless chicken breasts or pork loin, sliced thinly (you can also use shrimp or tofu for a vegetarian option)
  • 2 tablespoons vegetable oil
  • 1 cup bean sprouts
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snap peas or green beans
  • 1 small onion, sliced
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced or grated
  • 3-4 green onions, chopped (for garnish)

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water (for thickening)
  • 1 teaspoon sesame oil
  • 1 cup chicken broth or vegetable broth
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:

    • Slice the meat and vegetables as needed.
    • In a small bowl, mix the soy sauce, oyster sauce, chicken broth, and sesame oil. Set aside.
  2. Cook the Meat:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the sliced meat and stir-fry until browned and cooked through (about 5-7 minutes). Remove the meat from the skillet and set aside.
  3. Stir-Fry the Vegetables:

    • In the same skillet, add the remaining tablespoon of vegetable oil.
    • Add the garlic, ginger, and onion, stir-frying for about 1-2 minutes until fragrant.
    • Add the broccoli, bell peppers, snap peas (or green beans), and bean sprouts. Stir-fry for another 3-5 minutes until the vegetables are crisp-tender.
  4. Combine and Thicken:

    • Return the cooked meat to the skillet and pour the sauce mixture over the stir-fry.
    • Stir everything to combine, then add the cornstarch mixture to thicken the sauce.
    • Cook for an additional 2-3 minutes until the sauce thickens, stirring occasionally.
  5. Season and Serve:

    • Taste and adjust seasoning with salt and pepper, if needed.
    • Serve hot over steamed rice or noodles. Garnish with chopped green onions.

Tips:

  • Feel free to customize Chop Suey by adding other vegetables such as carrots, mushrooms, or zucchini.
  • Adjust the seasoning of the sauce to suit your taste.
  • Serve immediately for the best texture and flavor.

Enjoy your homemade Chop Suey!
