Ingredients:
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 large tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 medium cauliflower, cut into florets
- 3 large potatoes, peeled and diced
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
- Optional: a squeeze of lemon juice
Instructions:
-
Heat the Oil:
In a large pan or wok, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant. -
Sauté Onions:
Add the finely chopped onions and cook until they become soft and golden brown, about 5-7 minutes. -
Add Garlic and Ginger:
Stir in the minced garlic and grated ginger; cook for another minute until aromatic. -
Cook Tomatoes and Spices:
Add the chopped tomatoes, turmeric, coriander, garam masala, and red chili powder. Cook until the tomatoes break down and the mixture thickens, about 8-10 minutes. -
Add Potatoes and Cauliflower:
Mix in the diced potatoes and cauliflower florets. Stir well to coat them with the spice mixture. -
Simmer:
Cover the pan and cook on low heat for about 20-25 minutes, stirring occasionally, until the potatoes and cauliflower are tender. Add a splash of water if necessary to prevent sticking. -
Season and Garnish:
Season with salt to taste. Garnish with chopped cilantro and a squeeze of lemon juice if desired. -
Serve:
Enjoy hot with steamed rice, naan, or roti.
Tip: For a slightly creamier texture, you can stir in a tablespoon of yogurt before serving.
Enjoy your flavorful homemade Aloo Gobi!
