Ingredients:
For the Sushi Rice:
- 1 cup sushi rice
- 1 ¼ cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
For the Shrimp Filling:
- 1 lb large shrimp (peeled and deveined)
- 1 tablespoon olive oil
- 1 teaspoon garlic (minced)
- 1-2 teaspoons wasabi paste (adjust to taste)
- 2 tablespoons mayonnaise
- 1 green onion (finely chopped)
- Salt and pepper to taste
- Optional: sesame seeds for garnish
For the Cups:
- 6-8 small wonton wrappers
- Cooking spray or oil for brushing
- Optional: nori seaweed sheets, cut into small squares for garnishing
Instructions:
1. Prepare the Sushi Rice:
- Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.
- Combine the rinsed rice and water in a medium pot. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 18-20 minutes or until the water is absorbed and rice is tender.
- In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is done, fluff it with a fork and gently fold in the vinegar mixture. Set aside to cool.
2. Cook the Shrimp:
- In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
- Add the shrimp, seasoning with salt, and pepper. Cook until the shrimp are pink and opaque (about 3-4 minutes).
- Remove from heat and let cool slightly. Then chop the shrimp into small pieces.
- In a bowl, mix chopped shrimp, wasabi paste, mayonnaise, and green onion. Adjust seasoning to taste.
3. Prepare the Wonton Cups:
- Preheat the oven to 375°F (190°C).
- Lightly brush the wonton wrappers with cooking spray or oil and arrange them in a muffin tin to form cups.
- Bake for about 8-10 minutes or until they are golden and crispy. Let them cool.
4. Assemble the Sushi Cups:
- Take the cooled sushi rice and press a small amount into the bottom of each wonton cup.
- Spoon the wasabi shrimp mixture on top of the sushi rice.
- Optionally, garnish with sesame seeds and a square of nori.
5. Serve:
- Serve immediately as a delightful appetizer or chill in the refrigerator until ready to serve.
