Instructions:
1. Prepare the tvorog: If using fresh tvorog, mash it through a sieve or blend it until smooth. If it's clumpy, this helps create a smooth batter.
2. Mix ingredients: In a large bowl, combine tvorog, eggs, sugar, vanilla (if using), and a pinch of salt. Mix well.
3. Add flour: Gradually add flour, mixing until the dough is firm but soft. The dough should be slightly sticky but manageable.
4. Form pancakes: Dust your hands with flour and form small patties or disks from the dough.
5. Cook: Heat a skillet over medium heat and add butter or oil. Fry the syrniki until golden brown on both sides, about 3-4 minutes per side.
6. Serve: Serve warm with sour cream, jam, honey, or fresh berries.
