Ingredients:

For the Chicken Marinade:

  • 1 pound (450g) boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey or sugar
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon five-spice powder (optional)

For the Pickled Vegetables:

  • 1 cup carrots, julienned
  • 1 cup daikon radish (or more carrots), julienned
  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon salt

  • Fresh cucumber, sliced
