Ingredients:

For the Chicken Marinade:

  • 1 pound (450g) boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey or sugar
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon five-spice powder (optional)

For the Pickled Vegetables:

  • 1 cup carrots, julienned
  • 1 cup daikon radish (or more carrots), julienned
  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon salt

For the Sandwich:

  • Baguette (preferably Vietnamese-style)
  • Fresh cucumber, sliced
  • Fresh cilantro (coriander)
  • Sliced jalapeños or other chili peppers (to taste)
  • Mayonnaise (optional)

Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix together the soy sauce, fish sauce, honey, vegetable oil, minced garlic, black pepper, and five-spice powder.
    • Add the chicken thighs and coat well. Let it marinate for at least 30 minutes or preferably overnight in the refrigerator.
  2. Pickle the Vegetables:

    • In a saucepan, combine rice vinegar, water, sugar, and salt. Heat over medium heat until the sugar dissolves.
    • Remove from heat and pour over the julienned carrots and daikon in a bowl or jar. Allow to cool, then refrigerate for at least 30 minutes to pickle.
  3. Cook the Chicken:

    • Preheat your grill, grill pan, or skillet over medium-high heat.
    • Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.
  4. Assemble the Banh Mi:

    • Slice your baguette lengthwise without cutting all the way through, creating a pocket.
    • Spread a thin layer of mayonnaise inside (optional).
    • Layer in sliced chicken, followed by pickled vegetables, cucumber slices, cilantro, and jalapeños.
  5. Serve:

    • Serve immediately and enjoy your delicious homemade chicken banh mi!

Tips:

  • You can also customize your Banh Mi with additional toppings like sliced avocado, tomato, or different types of meat such as pork or tofu.
  • If you like extra crunch, consider adding crushed peanuts or fried shallots.
