For the batter:

1 cup all-purpose flour

 3/4 cup dashi stock (can substitute with water)

1/2 cup shredded cabbage

1/4 cup green onions, finely chopped

1 large egg

1/4 cup grated nagaimo (optional, for a fluffier texture)

Salt and pepper to taste

Fillings (choose your favorites):

Sliced pork belly or bacon

Shrimp

Squid

Cheese 

Toppings:

Okonomiyaki sauce (store-bought or homemade)

Japanese mayonnaise

Aonori (seaweed flakes)

Katsuobushi (dried bonito flakes)

Pickled ginger

Chopped green onions

Instructions:

Prepare the Batter:

In a large mixing bowl, combine the flour and dashi stock. Whisk until there are no lumps. Add the egg and mix well. Fold in the shredded cabbage, green onions, and grated nagaimo (if using). Season with salt and pepper.

Heat the Pan:

Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with oil.

Cook the Okonomiyaki:

Pour about a cup of the batter onto the skillet, forming a round pancake about 6 inches in diameter. If using, layer your desired fillings (pork, shrimp, etc.) on top of the batter. Cook for about 4-5 minutes or until the bottom is golden brown, then carefully flip it over using a spatula to cook the other side for another 4-5 minutes.

Add Toppings:

Once both sides are cooked, plate your Okonomiyaki. Drizzle with Okonomiyaki sauce and Japanese mayonnaise in a crisscross pattern. Sprinkle with aonori, katsuobushi, and chopped green onions for garnish.

Serve:
