High-Protein Vermicelli Rasmalai is a delicious twist on the traditional Indian dessert. It combines soft vermicelli with a rich, creamy milk mixture and protein-rich ingredients, making it a more nutritious option for dessert lovers. The recipe is naturally comforting, mildly sweet, and suitable for special occasions or an indulgent evening treat.
Ingredients

- ½ cup whole-wheat or high-protein vermicelli
- 500 ml low-fat or high-protein milk
- 100 g paneer or low-fat cottage cheese
- 2 tablespoons milk powder
- 1–2 tablespoons honey or sugar, according to taste
- ½ teaspoon cardamom powder
- 1 tablespoon chopped almonds
- 1 tablespoon chopped pistachios
- 1 tablespoon chopped cashews
- 1 teaspoon rose water
- 1 teaspoon ghee
Cooking Method

Begin by heating the ghee in a non-stick pan. Add the vermicelli and roast it gently over low heat until it turns light golden and develops a pleasant aroma. Avoid over-browning it.
In another saucepan, heat the milk over medium heat. Add the milk powder and stir continuously to prevent lumps. Allow the milk to simmer for 5–7 minutes until it becomes slightly thicker. Add the paneer and continue cooking for another 2–3 minutes.
Next, add the roasted vermicelli and cook until it becomes soft but still retains a slight bite. Stir in the cardamom powder and honey or sugar. Turn off the heat and add rose water for a delicate fragrance.
Transfer the dessert to serving bowls and garnish with chopped almonds, pistachios, and cashews. It can be served warm or chilled.
