1. In a large bowl, add boiled shredded chicken, mayonnaise, ketchup, onion and capsicum. Make sure the chicken is fully cooled before mixing.

2. Add black pepper, chilli flakes and salt. Mix well until you get a smooth and creamy texture. You can adjust seasoning according to your taste.

3. Take two bread slices and spread the chicken mixture evenly. Do not overfill, so it stays neat while toasting.

4. Place a cheese slice on top of the mixture for extra cheesiness and cover with the remaining bread slices.

5. Spread a thin layer of butter on the outer sides of the bread. This helps to get that perfect golden color.

6. Heat a non stick pan on medium low flame. Place the sandwiches and toast for 2 to 3 minutes on each side until both sides turn golden and crispy and cheese melts slightly.

7. Remove from pan, cut diagonally into triangles and serve hot.

Serving Tip and Storage:

Serve with French fries, ketchup or garlic mayo dip for a complete cafe style experience. You can also add lettuce or tomato if you like. If you have leftover mixture, store it in an airtight container in the fridge and use within one day for best freshness.
